here's an easy one (My Bharata Natyam teacher absolutely loves it ):
Preparation time: 15 mn
Cooking time: 45 mn
Rest time: 0 mn
Total time: 60 mn
For 4 servings:
1 pie crust pastry sheet
3 eggs
1/3 cup heavy cream
10 oz spinach
3 oz smoked salmon
½ cup shredded cheese
2 tablespoons butter
salt and pepper
Preparation
1 Preheat the oven to 200°C/400° F. Line the quiche pan with the pie crust.
2 Cut the salmon into small pieces.
3 Wash the spinach and cook it in the butter. Drain and leave to cool. Cut coarsely.
4 In a bowl, mix the eggs, heavy cream and cheese. Add the spinach. Season with salt and pepper.
5 Spread the salmon evenly over the base of the pie crust and slowly pour over the egg and cream mixture.
6 Cook for 35-45 minutes, depending on the oven.
Finishing touches... If the smoked salmon is already salted, don’t add too much salt to the quiche. You can add more or less cheese, as desired. For a lighter quiche, replace half of the heavy cream with the same quantity of milk
you can also use mashed spinach (mixes more easily with the eggs and cream) and sprinkle the cheese on top before putting in the oven |
