This is for 2 servings.

Ingredients:


3 eggs
1 small Onion-- finely chopped
1 Onion -- chopped (like for curry) or ground to paste
4 Garlic petals paste
1 tsf ginger paste
1 green chilli finely chopped

Tej patta- 1

2 finely chopped Tomatoes
1 sprig coriander leaves

1 tsf chilli powder
1 tsf. Garam Masala -- or even coarsely ground mixture of 1 chhooti ilaichi (green cardamom), 2 laung, 2 black pepper balls will suffice. If available, 1 cm of dalchini. Dry powder, wet paste or coarsely ground- any will do.
1 tsf zeera
3/4 tsf Turmeric
Salt to taste
Oil

Method:

Omlette:

Beat eggs with 1/2 tsf salt (or according to taste). Add the very finely chopped onion, and beat again. Add green chillies.
Heat oil (3-4 tsf) in frying pan, add the beaten egg, before it is well cooked, fold it so that it has 3 layers. After it is fried, cut it into 4 pieces and keep aside.


Curry:


1. Heat oil in kadai and add tej patta, zeera to hot oil.
Optional- can add 1 sliced green chilli, and a pinch of heeng powder.
2. Add the onions and garlic paste fry till golden brown. If you add onion paste, it has to fried longer, stirring continuously, so that it is very well fried and dry.
3. Add turmeric, tomatoes, ginger paste, and optional -- 1.2 tsf of zeera and dhaniya powder (not essential). Fry till all water from the tomatoes has dried up. Now add 1- 1.5 cup of water. Add salt, chilli powder, garam masala and the omlette pieces and cover. Let it boil for 7-8 minutes.
4. Garnish with finely chopped coriander leaves.
