Gajar Ka Halwa

A tasty and easy traditional sweet dish, and nutritious too!!
It is eaten both cold and hot, according to personal preference

[Skill level : Beginner]

Ingredients:
500 grams Red Carrots, peeled and grated
15 ml ghee or unsalted butter (whatever you have with you)
750 ml full cream milk, OR if you want to cook it in a shorter time, use 150 ml condensed milk and 500 ml Milk
250 gram sugar (but really, it is relative- how sweet you like it)
cashewnuts, Raisins (kishmish), pista (pistachios): chopped
crushed green cardamom (chhoti ilaichi) - 2 pieces
5 almonds (sliced)
optional: few strands of saffron

Method:
1-Heat the ghee, fry the grated carrot on low flame for 7-8 minutes, stirring once in a while.
2-pour in the milk and the condensed milk and let the carrot get cooked on medium flame. Keep stirring once in a while.
3- When it is thick and somewhat dry, add the sugar, and stir continuously.
4- After 2 minutes, add the cashew, pista, raisin, cardamom powder, and keep stirring till it is very dry.
5- Decorate it with the chopped or sliced almonds

That s great!!! Sweet dishes are the only thing that are easy to share with western people.
Rest of everything is too spicy for them, unfortunately.
I have an Irish friend, and I still remember the spice free chicken I once cooked for him!!!

Take my advice, Aziz. Before trying tandoori, today with the chicken legs, you try out this one. Just marinate the legs with dry masala; chilly powder, haldi, dhania powder, salt and ginger garlic paste. Also garam masala powder or even your tandoori masala would be superb.

Leave it for half an hour. Then put some oil in a deep pan. Leave your marinated chicken into it. mix well and cover it. leave it till tender. Toss it again. Add curd or cream to it ( two tbps) and cover it for five more mins. Its done . Garnish it with coriander or/ and mint leaves finely chopped.

It is simple and cooks real fast. ( pppsssst....... Wink . i am having the same for diner tonight!!)

Recipe for Gajarka halwa is as bellow :

Grated carrot 1 kg
Milk 1 litre
mawa 200 grams
Sugar 2 cups
Ghee 2 tbsp.
Dry fruits 1/2 cup
Cardamom powder 1/2 tsp.

Method :

1. Put milk and grated carrots in a heavy base kadhai / deep saucepan and bring it to boil. Cook over medium heat until all the milk gets dried up. You should stir the mixture occasionally to prevent any sticking.
2. Add sugar, cardamom powder, 1/4 cup dry fruits and continuously stir for 5-7 minutes.
3. Add ghee and mawa. Stir well and fry on low heat until ghee starts separating.
4. Decorate with remaining dry fruits and serve hot. (Optional- decorate with silver leaf)
5. Add lemon juice and paneer pieces. Mix well so that all the paneer pieces gets properly coated with sugar. Allow it to cool.
