Yesterday I got very good bhindi. I am posting here a very easy dish with Bhindi.
Bhindi Masala
Ingredients:
1/4 kg okra (small)
1 onions, thinly sliced
1 tomato, chopped
3-4 Tsf oil
1 pinch paprika or chilli powder
1/2 teaspoon zeera powder
a pinch of ginger powder
1/2 teaspoon amchoor powder (or substitute fresh lemon juice)
1/4 teaspoon turmeric
salt and freshly ground pepper to taste
Garnish
1 pinch garam masala
chopped coriander leaves for garnish
Method:
1. Wash okra under running water, dry lightly. Slice off the ends and cut each in half lengthwise. Set aside. Prepare onions and tomatoes. Set aside.
2. In a wok or kadai heat the oil and sauté onions until translucent.
3. Add all spices except the garam masala and stir-fry 2 minutes. Add the tomatoes and fry on medium high heat, stirring constantly for 1 minute. Add the okra and stir-fry 2 minutes. Cover and steam over medium heat until tender, about 12-15 minutes. Check in between, and if it is too dry, or in risk of getting burnt, sprinkle 3 tsf water and cover again. Repeat if necessary.
4. Sprinkle with the garam masala.
5. Serve hot on a plate, garnished with the coriander leaves. _________________ ANJU |
